Mashed Cauliflower tastes great and is the perfect side dish for any meal where you’d normally have mashed potatoes.
· 3 tbsp chopped green onions
· Dash of salt
· 2 tbsp butter
· 1/4 cup sour cream
· 1 head cauliflower
1. Chop and steam the cauliflower like you steam any vegetable.
2. Pour the cauliflower in a colander and let it set for 5 minutes to drain extra water.
3. Put all of the cauliflower in a food processor and puree.
4. Add the butter, sour cream, and salt and mix until fully combined.
5. Top with the chopped green onions
